Beef and Vegetable Miso Stir Fry

Ingredients

  • 400 g beef (sliced)/牛肉スライス/牛肉(薄片)
  • 300 g cabbage/キャベツ/卷心菜
  • 1 carrot/にんじん/紅蘿蔔/红萝卜
  • ½ onion/たまねぎ/洋葱
  • 1 Tbsp oil/油
  • 1 Tbsp sesame/ごま/芝麻

Beef Marinade

  • 1 Tbsp sake/酒/清酒
  • 1 Tbsp potatostarch/片栗粉/番薯澱粉/淀粉
  • ½ tsp salt/塩/鹽

Miso Sauce

  • 1 Tbsp miso/味噌
  • 1 Tbsp sake/酒/清酒
  • 1 Tbsp sugar/砂糖/糖

Instructions

  • Cut beef into bite size pieces. Mix the marinade and let it sit for at least 10 minutes.
  • In a bowl, mix all the ingredients for the miso sauce and set aside.
  • Cut the cabbage into bite size pieces as well and the carrot and onion into strips.
  • Heat oil in a pan and stir fry the vegetables. Cover for at least 3 minutes to help steam and becomes half way cooked. Transfer to a plate and set aside.
  • On the same pan, put the marinated beef and stir fry until color changes.
  • Once beef is no longer pink add back the vegetables and add sauce. Stir fry for a couple more minutes and everything is well coated with sauce.
  • Let some liquid evaporate. Check the taste and adjust with salt if needed. Top with sesame seed and mix quickly and you're done.

Notes

Take note that the beef may become hard or chewy if sautéed for a long period of time. So cooking the vegetables ahead of time and separately before mixing with beef is a good way to not overcook it.
