Cucumber and Sesame Kimchi
Servings: 4 people
- 2 cucumber/きゅうり/青瓜/黄瓜
- 2-3 Tbsp kimchi/キムチ/泡菜
- 1 Tbsp sesame oil/ごま油/芝麻油
- liitle salt/塩/鹽
- Wash cucumber. Wrap or place in plastic bag and beat lightly using rolling pin or any hard clean object. Using hand, break cucumber into irregular bite size pieces.
- Sprinkle bit of salt, shake and leave for 5 mins. Drain any water and squeeze with kitchen paper.
- Mix with kimchi and seasonings. If taste seems not enough, add some salt to correct it.
Beating and breaking the cucumber using hands instead of cutting with knife is one way to help the flavor to adhere or stick more to the cucumber thus resulting in better taste.
