Fried Oyster

Ingredients

  • 300 g oyster/牡蠣/カキ
  • 3 tbsp all purpose flour/小麦粉・薄力粉/面粉和薄力面粉
  • 100 g breadcrumbs/面包粉/パン粉
  • appropriate amount oil/油 for frying

Batter

  • 1 egg/卵/鷄蛋/鸡蛋
  • 3 tbsp all purpose flour/小麦粉・薄力粉/面粉和薄力面粉
  • 1 tbsp water/水

Instructions

  • Wash properly and dry off extra moist of oyster.
    *One way to clean them is to use flour to knead them gently and then rinse. You may repeat for 2 or more times if necessary.
  • Add 3 tbsp of flour to oysters and mix thoroughly
  • In a bowl beat the egg and add the rest of ingredients for batter and mix well.
  • Pour the breadcrumbs on a separate bowl.
  • Heat an appropriate amount of oil in a pan.
  • If using smaller oyster, scoop 2-3 pieces at once and dip in the batter to totally coat it. Take it out and place in the bowl of breadcrumbs and coat nicely as well. Press together lightly and gently drop them on the pan to fry. Fry for at least 2 min each side or depending on the size of oyster. Fry until becomes golden brown.
  • Place on a frying rack or kitchen paper to drain excess oil.
  • Enjoy while still crunchy with your choice of dipping sauce.
    *May tend to soften when left for long time after frying.
