Ingredients
- 400 g beef (sliced)/牛肉スライス/牛肉(薄片)
- 1 carrot/にんじん/紅蘿蔔/红萝卜
- 10 pcs mushroom(shiitake)/しいたけ/香菇
- ½ onion/たまねぎ/洋葱
- 1 bunch leek/ニラ/韭菜
- 40 g glass noodle/春雨/米絲
- 2-3 Tbsp sesame oil/ごま油/芝麻油
Beef Marinade
- 1 Tbsp soysauce/醤油
- 1 Tbsp sugar/砂糖/糖
- 1 clove garlic/にんにく/大蒜 minced
- 1 Tbsp sesame oil/ごま油/芝麻油
Sauce
- 2 Tbsp sugar/砂糖/糖
- 2 Tbsp sesame oil/ごま油/芝麻油
- 2 Tbsp soysauce/醤油
- 1 clove garlic/にんにく/大蒜 minced
- pepper/胡椒
Instructions
- Cut beef slices into 2-3 cm long.
- Add the marinade to the beef and leave for at least 30 minutes to let the flavor be absorbed.
- Cut carrot into thin strips. Cut leeks into 1cm long. Slice the onion. Mince the garlic. Slice mushrooms thinly.
- In a bowl, mix the ingredients for sauce and set aside.
- Heat a pan and pour little amount of sesame oil. Stir fry the vegetables by batches, adding more oil if necessary. Stir fry onion until slightly caramelised or soft. Transfer to a bowl and set aside.
- Repeat the same procedure with the carrot, mushrooms and leek. Each has their own texture so stir fry them according to your choice of doneness.
- Soak in hot water or boil directly the glass noodles according to the packaging. Drain well and cut into smaller pieces.
- Once the vegetables are cooked separately. This time you may or may not oil to the pan and stir fry the beef until it is no longer pink.
- You may put the noodles and vegetables directly back in the pan and stir fry while mixing well. Add sauce and sesame seeds and stir fry for few more minutes until everything is well coated with sauce. Or use a big mixing bowl to toss everything in.
- Top with more sesame seeds and sesame oil if preferred.
Notes
Other vegetables are also perfect option like spinach and bell pepper. You can adjust according to what's available in your fridge.
Also adding strips of omelette not only gives more color but variety of flavor and texture as well.
