Pan Grilled Saury
Servings: 3 people
- 3 sanma/さんま/秋刀魚
- little salt/塩/鹽
- ½ radish/大根/白蘿蔔/白萝卜 grated
- 2 Tbsp lime/かぼす/酸檸檬
- Wash the saury and pat dry any liquid left. You may or may not remove the innards or guts. Some find it tastier with the guts completely intact. Make few slits along the thickest part of the fish to help cook the inside evenly. Rub appropriate amount of salt on the fish.
- Place a parchment paper on a pan without any oil. Place the saury as flat as possible and grill both sides under medium heat about 5 minutes each or depends how big the fish are.
- Peel and grate the radish. Squeeze out excess juice, but not complete. Pair with ponzu sauce or of not available soysauce and some lime or lemon works fine as well.
